Ingredients

  • Cauliflower (some)
  • Cabbage (some)
  • Potatoes (2 medium, boiled)
  • Ginger (some, chopped)
  • Onion (some, chopped)
  • Green Chili (some, chopped)
  • Garlic (some, chopped)
  • Paratha dough (as needed, pre-made or freshly prepared)
  • Ghee or Oil (for cooking)
  • Chutney or Pickle (for serving)

Instructions

  1. Boil cauliflower, cabbage, and potatoes until they are soft and cooked through.
  2. While the vegetables are boiling, finely chop ginger, onion, green chilies, and garlic.
  3. Once the boiled vegetables have cooled slightly, mash the cauliflower, cabbage, and potatoes thoroughly to create a base for the filling.
  4. Combine the mashed vegetables with the chopped ginger, onion, green chilies, and garlic. Mix well to form the pav bhaji paratha filling. Let it cool completely.
  5. Take a small portion of the prepared paratha dough and flatten it into a disc.
  6. Place a generous amount of the pav bhaji filling in the center of the dough disc.
  7. Carefully bring the edges of the dough together to seal the filling inside, forming a ball.
  8. Dust the stuffed dough ball with some dry flour and gently roll it out into a flat, round paratha.
  9. Heat a tawa (griddle) over medium heat. Once hot, place the rolled paratha on it.
  10. Cook on one side until light brown spots appear, then flip the paratha.
  11. Apply ghee or oil generously to the cooked side. Flip again and apply ghee or oil to the other side.
  12. Cook the paratha, pressing gently, until both sides are golden brown and crispy.
  13. Remove the cooked paratha from the tawa and repeat the process for the remaining dough and filling.
  14. Serve the hot Pav Bhaji Parathas immediately with chutney or pickle.
